[Recipe]: Vegetarian Kimchi Soup

Ingredients
- 1 small onion, thinly sliced
- 6 cloves of garlic, minced
- 1 cup kimchi (aged, if possible)
- 4 cups of vegetable broth
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 3 baby bok choy, quartered
- 1 box of tofu, cut into cubes
- 1/4 cup of kimchi juice
- 1 tablespoon of soy sauce
- 4 tablespoons gochujang
- 1 tablespoon Korean red pepper flakes (gochugaru) or red chili flakes
- 1 teaspoon rocoto chili paste
- 1/4 cup green onion, sliced
- Cooked rice, for serving
- Furikake or sesame seeds as garnish
Process
- Sautee onion, garlic, and kimchi until onions are translucent.
- Add the vegetable stock and bring to a low boil.
- Add remaining ingredients and let simmer for
20 minutes
.
- Serve over rice with furikake and/or sesame seeds on top.
