[Recipe]: Aloo Gobi

Ingredients
- 1/4 cup of vegetable oil
- 1 large onion, peeled and chopped into small pieces
- 1 teaspoon of cumin seeds
- 2 teaspoons of tumeric
- 1 teaspoon of salt
- 1 heaping teaspoon of rocoto paste
- 1 can (28 ounces) of diced tomatoes with juice
- 1 inch of fresh ginger, peeled and chopped
- 5 cloves of garlic, chopped
- 1 large cauliflower
- 3 large yukon gold potatoes, peeled and cut into chunks
- 2 teaspoons of garam masala
- 1/4 teaspoon sugar
- 1 large bunch of cilantro, roughly chopped
Process
- Heat vegetable oil in a large sauce pan.
- Add onion and cumin seeds. Cook until onions become golden and translucent.
- Add tumeric and salt.
- Add rocoto paste.
- Stir tomatoes into onion mixture.
- Add garlic and ginger and mix thoroughly.
- Add cauliflower and potatoes to the sauce plus a few teaspoons of water.
Cover and let simmer for
20 minutes
or until potatoes are cooked.
- Add garam masala and sugar and stir.
- Sprinkle chopped cilantro as garnish.
