  1. Heat vegetable oil in a large sauce pan.
  2. Add onion and cumin seeds. Cook until onions become golden and translucent.
  3. Add tumeric and salt.
  4. Add rocoto paste.
  5. Stir tomatoes into onion mixture.
  6. Add garlic and ginger and mix thoroughly.
  7. Add cauliflower and potatoes to the sauce plus a few teaspoons of water. Cover and let simmer for 20 minutes or until potatoes are cooked.
  8. Add garam masala and sugar and stir.
  9. Sprinkle chopped cilantro as garnish.
